Breakfast In Kat’s Kitchen
Blueberry Breakfast Smoothie
Ingredients: 1.5 C coconut water or almond milk, 1 C blueberries, 1 C spinach, 1 banana, 1/2 C nut butter, 1/4 C chia seeds.
Instructions: blend and serve.
Ingredients: 3 ripe bananas, 3 eggs, 1/4 C coconut flour (optional), 2 T butter or coconut oil, salt.
Instructions: (1) mash bananas with eggs; (2) add flour, if desired; (3) add melted butter or coconut oil; (4) mix ingredients with a dash of salt; (5) coat a skillet with butter or coconut oil and warm to medium-high temperature; (6) cook pancakes until the edges are golden brown.
Ingredients: 3 C buckwheat, 1/2 C raw sunflower seeds, 1/2 C raw pumpkin seeds, 1/4 C coconut oil, 2 T chia seeds, 2 T maple syrup, 1 t cinnamon, 1 t vanilla, sea salt.
Instructions: (1) preheat oven to 325; (2) liquify coconut oil; (3) mix dry ingredients in one bowl and mix wet ingredients in another bowl; (4) combine dry and wet ingredients; (5) cover a cooking sheet with parchment paper; (6) bake for 40 minutes.
Almond Thumbprint Cookies
Ingredients: 1.5 C almond flour, 1/2 C arrowroot starch, 1/2 C jam or jelly, 1/3 C coconut oil, 1/3 C maple syrup, 1 t vanilla, 1 t baking powder, salt.
Instructions: (1) mix dry ingredients into one bowl; (2) mix wet ingredients into another bowl – coconut oil (melted) with syrup and vanilla; (3) mix all ingredients into a dough; (4) cover a baking pan with parchment paper; (5) roll dough balls and place onto the baking pan; (6) poke a thumbprint on top of cookies and spoon in your favorite jam or jelly.
Shredded Apple Lemon Love
Ingredients: 1 apple, 1 lemon, 1 orange.
Instructions: (1) shred apple; (2) squeeze lemon and orange; (3) drizzle juices over shredded apples; (4) stir and serve.
