Kat’s Kitchen Classics
Liquid Gold Ghee (Clarified Butter)
Ingredients: unsalted butter.
Instructions: (1) heat pot to medium high, (2) place butter into the warmed pot and heat to a gentle simmering point; (3) reduce heat to low temperature; (4) listen for the sound of a babbling brook, which will eventually become a quieter sizzle and popping sound – that’s when it’s ready! (5) remove from heat and set aside to cool for 5 minutes; (6) pour liquid through a strainer and cheesecloth into an air-tight container to separate milk solids.
Super Simple Guacamole
Ingredients: 1 avocado, 1 garlic clove, 1 lemon, salt.
Instructions: (1) spoon avocado into a mixing bowl; (2) crush garlic, mince, and mix with avocado; (3) squeeze lemon juice and mix with avocado; (4) add salt.
Chia Seed Endurance Drink
Ingredients: 2 C water, 1 lime, 1 T chia seeds, 1 t honey.
Instructions: (1) squeeze fresh lime juice into glass of water; (2) add chia seeds and honey; (3) stir, and let the chia seeds activate for 5-10 minutes before serving.
Roasted Pumpkin Seeds
Ingredients: raw pumpkin seeds, olive oil, salt.
Instructions: (1) preheat oven to 350; (2) spread seeds on a baking pan; (3) drizzle olive oil onto seeds; (4) add salt; (5) heat for 8 minutes.
Ingredients: 1 C roasted pumpkin seeds, 1 C fresh basil, 2 T olive oil, 1 T minced garlic, salt.
Instructions: (1) combine all ingredients; (2) process in a high-speed blender; (3) adjust seasoning for your family’s taste preference.
